Not sure if someone's already posted this.

Can use WinSCP, Terminal or Mobile Terminal

1. SSH to iPhone
2. Goto /System/Library/TextInput
3. Rename TextInput_en.bundle to whatever you like

By using Mobile Terminal
1. enter "su" and password to go to root account
2. "cd /System/Library/TextInput"
3. "mv TextInput_en.bundle TextInput_en_bk.bundle"

DONE.

You need to jailbreak the phone and install the SSHd.

The IP address is listed under the WiFi connection you have established, press the blue > button for it under Settings > Wi-Fi.

Yes, the iPhone must be jailbroken before you can do this since you have OpenSSH in place. You can use MobileTerminal that comes with Cydia to rename this file, no need to use WinSCP or Putty.

Yes, it's very useful when you type in English! If you are trying to typing something non English than you will have a problem. Just in case anyone wants to turn it off, as long as you know how to do it. Have fun.
